4 medium Eggs
2 drops Vanilla Extract

500 g Icing Sugar
2 drops Vanilla Extract
55 g (crushed) Maltesers

As I am becoming obsessed with Maltesers; so, why not trying out Malteser cupcakes? Which are so irresistible and mouth-watering, topped up with the crunch of Maltesers. They are perfect for any occasion.

Cupcakes

Preheat your oven to 180 degrees C and line 12 muffin cups

Take a large bowl and beat together butter, caster sugar and brown sugar until its creamy and fluffy. Add vanilla extract and eggs (one at a time) and beat again for few minutes until the mixture is smooth

In another bowl, sift together baking powder, flour and salt. Mix maltesers in this flour mixture. Now using a wooden spoon fold the flour mixture into the creamy batter till well incorporated. Pour the mixture equally into 12 cupcake cases filling each case 2/3 full.

Bake the cupcakes for 25 mins or until a toothpick inserted comes out clean. Take them out from the oven and set aside to cool.

Butter Cream

Simply beat together butter, icing sugar and few drops of vanilla extract until pale and creamy

Top up the cupcakes with the butter cream using a piping bag or simply spread butter cream on the cupcakes with the help of knife and dust some roughly crushed maltesers on top to finish.
