Spread the baking sheet in the oven and preheat it to 450 Fahrenheit degrees

Combine fresh chopped thyme or 2 tsp dried, 1 table spoon oil, whole-grain or mustard and ¼ tsp of salt and pepper in a bowl and spread this mixture evenly on 1-1/2 - 2 pounds skin removed bone-in chicken thighs

On the other side, add 1 table spoon oil and ¼ table spoon salt and freshly ground pepper in peeled potatoes and onions

Spread the vegetables on the baking sheet and place chicken on top of vegetables
