20 Spring roll wrappers

Vegetable Spring Rolls are easy to make and taste very good. They are a good way to get a lot of vegetables in your diet. You can also make a lot of rolls at one time and freeze them for eating at a later time.

Preheat the oven to 150 degree Celsius

Place the noodles in a pan of boiling water. Cover the pan with a lid and cook on medium heat for about 5-10 minutes. When the noodles are cooked, drain them well to remove water

Take a pair of scissors and cut the vermicelli noodles so they are short, about 2-3 cm in length

Take another cooking pan and add peanut oil to it. When the oil is hot, shake the pan a little so the hot oil covers the entire pan; be careful not to splash any oil on yourself

Add the sliced onions, cabbage, garlic and grated carrots to this pan. Stir fry the vegetables for 2-3 minutes till the vegetables become a little soft but do not lose their crunchiness

Add noodles, chestnuts, soy sauce and pepper. Mix them with a spoon for a minute or two, and then remove the pan from the stove. Take out the mixture and put it in a bowl

In another bowl, mix the corn flour with a little water to make a thick paste

Place the spring roll wrapper on a flat surface. Apply the corn flour paste to the edges of the wrapper

Take one spoonful of the mixture that you have prepared and place it into one corner of the spring roll wrapper. Fold the corner and roll the entire wrapper. The corn flour paste will help hold it together. Once rolled, press the edges together so it does not come undone

When your rolls are thus prepared, heat vegetable oil in a frying pan. When the oil is hot, reduce the flame to medium

Place three or four rolls in the oil at one time. When one side is golden brown, turn the rolls over to fry the other side. Fry all the rolls in batches. It is best to deep fry the rolls

When your rolls are fried, remove them from the pan and drain them on a paper towel to remove excess oil. Serve while still hot. You can serve them with chili sauce or even ketchup.
