Place the 1 cup peeled and shredded potato, carrots & zucchini in a colander. Dry these vegetables by placing the paper towel on the top

Sprinkle salt over these vegetables and drain them for 15 minutes

Squeeze again with the help of paper towels

Combine 3 eggs, ½ tsp salt, pepper and vegetables in a mixing bowl. Mix it well

Stir in flour, parsley, feta and matzo meal

Heat vegetable oil in a frying pan. Place the vegetable mixture (cake sized shape) in hot oil and fry until golden brown from both sides.

Take our from oil and dry the fried latkes on paper towels
