First take a large skillet and boil salted water, add peas, scrubbed and cut potatoes (5mm slices) and put over heat for boiling

Lower the heat and stir it gently for 3 minutes till the potatoes become soft. Now drain the water and keep potatoes and peas aside

Now take a fry pan and put 2 tbsp. of oil and add finely chopped onion and cook it for 2 minute. Next add chopped garlic cloves and stir it gently till onions get light brownish in color

Next add peas and potatoes in the pan and stir it for another five minutes till potatoes get tender. Remove it from heat and set it aside

In a bowl, add eggs with black pepper and fresh parsley chopped, chicken about 5mm thick chopped, potato, onion, peas and tomatoes. Add remaining oil on a pan and put the ingredients and stir it gently

Cook the omelette for five minutes on low heat by stirring it gently

Next step is to preheat the grill at moderate heat and add the omelette placed in the pan under the grill and cook for another five minutes till its gets golden brown
