Add the coconut milk to a pan and heat it. As it is heating, stir in the curry paste. Break the paste into small pieces of pork or you can use 6 chicken breast cubes and mix well

When you see red oil simmering to the top, add the peanut butter and the rest of the ingredients. Stir and taste. Taste the fish sauce, sugar and tamarind flavors. Add a few teaspoons of water if the paste is thick. Serve with satay and cucumber salad. Place the sauce on a flat plate for easy dipping.
