For the Cupcakes

Preheat the oven to 350 degrees (F) and Line 12 cupcake with cupcake liners and spray the liners with non-stick spray. Keep it aside

Place the butter in a microwave-safe bowl & melt the butter in a microwave. Heat it for 30 seconds and stir in between each increment

Add in the vanilla and oil and whisk smoothly. Add in the sugar and whisk until combined properly

Add in the eggs and egg yolk and beat well. Add the cornstarch, flour, cocoa powder, baking soda, baking powder, and salt to the wet ingredients and combine them before beating them into the mixture

Whisk in the buttermilk and apple cider vinegar and whisk smoothly

Now, fold in the sour cream and finally stir in the food color until combined. Divide the batter among the cupcake molds, filling each 3/4 of the way

Bake for about -17 minutes and cool completely before frosting.

Beat the cream cheese, butter, and vanilla with the help of an electric hand mixer at a medium-high speed. Beat it until smooth completely

On the slow speed, add the sifted confectioners' sugar and salt. Once all of the sugar has been added beat it again on high-speed for about 1-2 minutes

Spread the frosting over the, once it has completely cooled. Use a piping bag to pipe it into decorative swirls. Store these cupcakes in the fridge, for up to 3 days.
