Ingredients

4 cups Brown Lentils
5 tbsp Red Curry Paste
½ cup Coconut Milk
2 Onion
4 cloves Garlic Minced
1 tbsp Ginger Paste
4 tbsp (optional) Butter
1 tbsp All Spice
1-½ tsp Turmeric
2 tsp Sugar
2 Cayenne Pepper
2 cans Tomato Puree
1 tsp Salt

Red Curry Lentils are one of my favorite lentils. I usually eat this with boiled rice at lunch. Sprinkle with fresh coriander for better presentation.

Rinse the lentils and place them in a crockpot

Add the 2 onions, ginger, 4 cloves garlic, 5 tbsp curry paste,4 tbsp butter, 1 tbsp garam masala, 2 tsp sugar, 1-1/2 turmeric and cayenne. Stir to combine all the ingredients

Pour 1 can of tomato puree in the 4 cups regular brown lentils. Add water in the can and add it too in the crockpot

Stir the lentils to make sure it is completely dipped in the liquid

Cover and cook on high heat for 4-5 hours or low for 7-8 hours

Check one or twice during cooking. If needed, add water or tomato puree if the lentils are soaking up the liquid (the amount of water you add depends on how soupy you want the lentil curry)

Taste and season with 1 tsp salt. Lentil will be soft when they are done with cooking Stir in the coconut milk and sprinkle with fresh coriander or cilantro before serving Serve with naan or boiled rice on a dining table.
