This buttery Pear Tart puffs are soft and spongy which gives a beautiful appearance when cooked. Entertain your friends on this Christmas. In this recipe, peaches are particularly delicious and topped with sweet-sour jam thus enhance the flavor of the tart.

Heat oven to 350°F. Coat a 9 to 10 inch tart pan bottom with cooking spray and keep it aside

Whisk together the 1 cup all-purpose flour¼ tsp baking powder, and ¼ tsp Kosher salt in a medium bowl

Beat the ½ cup unsalted butter and 1/2 cup sugar with an electric beater in a large bowl until fluffy and light; beat in the almond extract and 1 egg

Slow down the mixer speed to medium. Add the flour mixture and mix it until fully incorporated to form a soft dough

Spread the dough evenly into the bottom and up the sides of the tart pan with a small spatula

Peel, core, and cut each pear or bosc into 1-1/2 to 2 inch wedges

Arrange one ring of pears with the tips, directing toward the center and overlap them slightly on the top of the dough

Top with another ring in the opposite direction. Sprinkle with the ¼ tsp. ground cinnamon and remaining tablespoon sugar

Bake for about 65-75 minutes until the crust is golden brown and the pears are tender. Let cool for 1 hour

Combine the jam and lemon 1tbsp juice in a saucepan. Cook and stir over a medium heat until the ¼ cup apricot jam has melted. Brush the jam mixture over the entire tart.
