Ingredients

8 Eggs
1/3 lb (ground) Beef
2 tbsp Vegetable Oil
1 tsp Chili Powder
1 tsp Paprika
1/4 cup Pickled Jalapeños
1/2 cup Monterey Jack Cheese (shredded)
1/2 cup Cheddar Cheese (shredded)
1 cup Cherry Tomatoes (quartered)
2 tbsp Cilantro (chopped)
for serving Guacamole (optional)
for serving Sour Cream (optional)
2 Corn Tortillas (sliced into 8 wedges)
1 Onion (sliced into half moons)

Whisk together eggs in a medium bowl until light and foamy

Heat oil in a skillet over medium-heat. Add tortillas wedges and fry until golden-brown for about 2 minutes, each side. Drain tortillas on towels.

Turn heat to medium, and add onions. Sauté until soft for about 5-7 minutes. Add ground beef, and stir with a wooden spoon.

Sauté until browned and cooked through. Now, drain the beef mixture to remove excess fat from skillet

Return beef to the skillet on medium-low heat. Stir in chili powder and season with salt and pepper to taste.

Push the meat mixture to one side of the pan, and add eggs to the opposite side. Sit for about 30 seconds with the wooden spoon.

When the eggs are almost scrambled , add cheeses, tomatoes and jalapeños, stir everything in the skillet together until just combined. Season to taste with salt and pepper. Remove skillet from heat.

Fold in a crispy tortilla wedges and garnish with cilantro.
