The combination of egg whites, cream of tartar and sugar are beaten together to form creamy stiff peaks in shape of mouthwatering Meringue.

First preheat the oven at 100 degree Celsius and line the baking sheets with parchment paper (greaseproof) or non-stick liner

Next in bowl take egg whites and batter them briskly with electric mixer until the mixtures becomes thick and fluffy cloud

Now add casting sugar and mix the ingredients thoroughly for 3-4 seconds between each addition. The key is to add the sugar precisely so it can stop the meringue from wilting later. The mixture should be thick and glossy

Now select one third of icing sugar over the mixture and gently fold it in with big rubber spatula or metal spoon. The key is to repeat the given procedure when icing sugar on the third time. The key is not to over mix as mixture should be glossy and smooth

Next is to scoop up a molded deserts spoon full of the mixture and add another one on the baking sheet to make a perfect oval shape. In a fan oven bake it for 1 hour 30 minutes or more until meringue becomes crisp and show pale coffee color
