In a large frying pan put baby Portobello mushrooms, onions, bulk Italian sausage, garlic cloves (minced), pepper and cook it gently till meat becomes brown. Put it aside and drain it

Take another large frying pan and coat it with cooking spray. Stir fry the 2 packages of spinach (6 ounce each), till it melts. Now place the 1 inch thick slices of Italian bread on the baking sheet and roast them for 1 or 2 minutes till it becomes light brown. Next is to transfer the mixture on baking dish greased well

In a large bowl add milk, eggs, salt, pepper, ground nutmeg and Italian seasoning. Mix all the ingredients thoroughly. Now put a layer of spinach and sausage mixture over bread and pour the mixture made earlier over the top. Now sprinkle it with cheese (shredded) and refrigerate it overnight

To bake remove the whole dish from the refrigerator 30 minutes earlier. Now preheat the oven at 350 degrees. Cover the dish and bake it for 50 minutes. After that uncover it and bake it for another 10 minutes till the knife is inserted in the middle to show that the mixture is soft
