Irish Stew is a traditional dish made in Ireland which consists of range of meat and root vegetables stew. The recipe for the dish is not the same and does various from place to place. The use of a cauldron for making stew was originated from UK.

Heat oven at about 160 degrees and Heat the oil in a pot. Put the bacon smoked cut and skinned into chunks for 4 minutes until it gets crispy

Then cook the stewed lamb cut into large pieces for at least 5 minutes till it gets brown. Take out the meat with inserted spoon. Now add carrots, herbs and onions to the pan and cook for 5 minutes and stir it gently

Bring the meat cooked earlier in the pan and add pearl barley, Pour the stock and then bring to a pot

Now put potatoes cut and sliced into large pieces cut into chunks on top in the stew and cover it and steam it in the oven for at least 1 hour 30 minutes when meat and potatoes become soft

The stew can be frozen and also kept in fridge for 2 to 3 days and heated on top of the stove

Then u can remove it from stove, put butter on the potatoes, sprinkle it with the spring onions and serve it with nice garnish on top of it.
