As the name suggests these Ginger Cookies stay soft and are big enough when you want to be naughty to try out delicious cookie sandwich by scooping some chocolate ice cream between two ginger cookies. It’s simply YUM!

Set your oven at 175 degrees C to get preheated

Now combine all the dry ingredients- ground ginger, flour, baking soda, ground cinnamon, ground cloves and salt. Sift the mixture once or twice and then set it aside

Take a large bowl and beat together 1 cup white sugar and margarine until creamy and fluffy. Beat an egg and then mix in water and molasses in that creamy mixture beat it for few seconds. Gradually combine in the dry ingredients with the creamy mixture. Knead to make a soft dough

Shape the dough into small sized balls; coat them in the remaining sugar. Now place these balls on an ungreased cookie sheet about 2 inches apart from each other and flatten them slightly

Bake the cookies in the preheated oven for about 8 to 10 minutes. Take them out from the oven and allow cooling for about 5 minutes before removing them from the cookie sheet. Store the cookies in an airtight jar.
