2 cloves Garlic
2 tbsp Cilantro
3/4 tsp Red Chili Flakes
1/2 tsp Cumin
1 tsp Salt
1/3 cup Lemon Juice
3 tbsp Olive Oil
For Salad
4 Chicken Fillet
1/2 Onion
5 cups Lettuce Leaves
2 Avocado
1/2 Red Bell Pepper
1/2 Yellow Bell Pepper
to garnish
to serve (optional) Sour Cream

Grilled chili Chicken Fajita Salad is the mixture of chicken and vegetables in one dish. This salad has rich nutrients of Vitamins and proteins. You can enhance the taste of salad by adding seasonal fruits in it. It is a good appetizer and help in weight reduction as ingredients are completely Fat-free

Whisk marinade ingredients ( brown sugar, fresh chopped cilantro, crushed garlic, olive oil, 100 ml (just over ⅓ cup) freshly squeezed lime juice, ¾ teaspoon red chili flakes (adjust to your preference of spice), ground cumin & salt ) together and combine it

Pour half of the marinade into shallow dish for marinating the chicken fillets for two hours. Keep the remaining for topping purposes

Heat the Oil in a grilled pan and grill boneless Chicken thigh fillets (skin removed) until and unless the fillet sides turn into golden brown in color. Once chicken is cooked, set aside for some time

Wipe the used Oil from the pan, drop 1 tbs of Oil in it and fry sliced Pepper and Onion for few minutes

Make strips of Chicken Slices and mix all the ingredients of: Avocado, Romaine (or cos) lettuce leaves, washed and dried, yellow & red Peppers; Slices, Onion Strips and Chicken to form a salad

Drizzle with remaining marinade and serve with Cilantro Leaves and Sour Cream.
