Boil the boneless, skinless chicken breasts in a large pot of water for about 30 minutes or until the chicken gets tender and cooked through. Now shred the chicken with the help of two forks

Set your oven to get preheated to 375 degrees. Now take a glass square baking dish (approx. 9x9). Spread a few spoonful’s of enchilada sauce at the base of the dish in order to prevent sticking . Now take 2 tortillas and place them at the bottom in overlapping position so as to completely cover the bottom of the dish. Layer the sauce, cheese, chicken, beans , and tortillas; repeat the layering again once to make a total of at least 2 layers

Now cover the top layer with 1 cup cheese and the remaining enchilada sauce. Cover the dish with an oiled aluminum foil and bake it for about 30 minutes. Remove the foil from the dish and bake it again for additional 5 minutes, uncovered or until the sauce starts to bubble and the cheese gets brown

Remove the dish from the oven and allow it to cool and set for about 15 minutes before cutting into slices. And your Chicken Enchilada Casserole is ready to serve!
