Caramel Turtle Thumbprint Cookies are fancy and decadent chewy cookies that are a perfect blend of little hint of salt and finishing drizzle of melted chocolate. Make your Christmas evening more special with some new recipes

Whisk together 1 cup all-purpose flour, 1/3 cup cocoa powder and 1/4 tsp salt in a mixing bowl and set aside

Whip 1/2 cup unsalted butter, 1/3 cup granulated sugar and 1/3 cup packed light-brown sugar with an electric beater on medium-high speed for 2 minutes until it becomes pale and fluffy. Mix in egg yolk (set egg white in a refrigerator) and 1 1/2 tsp vanilla extract. Blend in 2 Tbsp buttermilk. Now, slowly add in dry ingredients and mix just until fully incorporated

Make small balls of the dough and drop onto a sheet of plastic wrap, flatten dough into a 6-inch disk, then wrap the balls with plastic and chill for 45 minutes. Preheat oven to 350 degrees

Remove 1 large egg, yolk and white separated from refrigerator and blend vigorously until frothy. Add 1 1/4 cups finely chopped pecans in a bowl. Shape dough into 1-inch balls, drop into egg white and pecans bowl for even coating

Transfer to parchment paper lined baking sheets and make a deep hollow in the center of each dough ball

Bake in preheated oven for about 10-12 minutes

Remove from oven and gently press down on the existing hollow to create more space for caramel

Cool on baking sheet for several minutes

Transfer to a wire rack to cool completely.

For the Topping

Place 15 caramels (such as Kraft) and 2 1/2 Tbsp heavy cream in a microwave bowl. Heat mixture for 30 seconds and stir after each interval until melted and smooth. Spoon caramel into the center of the cookies and sprinkle tops with a little Flaky or coarse sea salt

Place chocolate and 2 tsp shortening in a separate microwave safe mixing bowl. Heat mixture for 30 seconds, stirring after each interval until melted and smooth. Pour into a piping bag and cut tip of the corner.
