Enjoy the taste of Unique flavor of Arabian Carrot Rice. A perfect rice dish for holiday meal. This Yummy Rice recipe is very common in Arab World. By Omitting meat its one of the favorite cuisine for vegetarian people but You can add some meat with carrot to make its flavor more tasty.

Soak the rice in cold water for maximum 20 minutes before you start cooking

While the rice are still soaked, add some oil in the deep cooking pot and put finely chopped onions and fry them until they turn golden brown then add pine nuts so they would be slightly cooked

Please don’t over cook the pine nuts as they get burn easily so you have to keep an eye while cooking

After that its time for carrots to go in the pot. There is no need to cook carrots much

Then add salt (to taste) ,black pepper and chicken stock

Now cover the lid until the stock comes to boil

Add rice to the boiling water and wait for them to boil , see when the stock begin to thicken ,Reduce the heat and cover the lid with paper towels and simmer it for 15 mins

This will help the rice to become fluffier. At the end add the food color and serve with any sauce or gravy.
